- Heat up the oil and add the onions fry for 1 minute until opaque in colour. Next add the Garlic crushed fry for 2 secounds then add the chicken chunks.
- Fry for 5 minutes then add the curry powder stir in next tomatoes and mix in. Cook on medium for 10 minutes.
- Next add the coconut milk, Sultanas and simmer for 10 minutes. Meanwhile cook the rice, i think Basmati rice is best for this curry.
- When rice is cooked drain and put on serving plates with the chicken curry poured on top sprinkle a little Desiccated coconut bits on top to finish. Chappatis bread will compliment this dish too.
