  3. Get 3 cloves garlic crushed
  4. Take 1 thsp ginger crushed

  7. Prepare 3/4 tbsp chilli powder
  8. Take 1/4 tbsp turmeric powder

  13. Get 2 tsp Vinegar

  22. Take 1 tbsp pepper powder or according to one's spice level

Clean and wash the cubed beef thoroughly using vinegar and salt. Heat oil in a non stick pan and add cubed onion,crushed ginger and garlic,salt,curry leaves and green. Beef Varattiyathu aka Beef Roast is a red- meat preparation where the meat is cooked with pungent flavour of the spices and fresh herbs and roasted enough to make it stay good for several days when refrigerators were a luxury of the day. Then add finely sliced onion, chopped ginger, garlic, slitted green chillies, half of the curry leaves and sauté till the onions turns light brown in color.

Steps to make Kuttanadan Beef Roast / Kerala Beef Roast:
  1. Heat oil in a pan and add chopped onions,crushed ginger,garlic,curry leaves,green chilled,salt.
  2. Saute untill the onions turn light golden brown.
  3. Add all the powders one by one and vinegar and saute in low flame untill you dont smell the raw flavours of the powders.
  4. Let it cool and grind this into a fine paste.
  5. In a pressure cooker, pour in this prepared masala paste along with beef pieces. And pressure cook according to the doneness of choice.
  6. Now to making Roast: in a large skillet heat 2tbsp of coconut oil and add shallots,chopped ginger garlic,curry leaves,slit green chillies and saute untill it turns slight golden brown
  7. Add beef masala to this and roast until it turns nearly dark brown to black color. Add plenty of curry leaves and pepper while roasting.
  8. Serve it hot with malabar parotta.
