- Preheat the oven to 200c
- Clean the skin and cut the potatoes into wedges. Season with jerk and two springs of chopped rosemary (no stalks)
- Put potatos in the oven for 30mins
- Clean the mushrooms and place top-down in a hot pan oiled with a dash of sesame oil.
- Crush in garlic clove and throw in a dash of soy. Cover for 5 mins
- Flip the mushrooms and cook for 5 more mins until the soy has evaporated
- Remove the mushrooms and pan fry the greens seasoned with salt and pepper
- Oil and season the steaks with pepper
- Turn the pan up to high and sear the steaks
- With a couple of sprigs or rosemary baste the steaks in their oil
- Take the steaks out to rest once cooked to your liking. Meanwhile fry an egg 🍳
- Serve with the egg on top. Enjoy with a glass of pinot noir 🍷
