  5. As soon as it is done, place it in a baking tray, trying to keep it from having too much liquid, let it for a while so that you can beat the eggs and add them on top.
  6. Break the feta cheese into pieces with your hands and spread it over the eggs.
  7. Place in a preheated oven for 20 minutes.

Spanakorizo, or spinach rice, is one of the great, classic, simple vegetarian dishes of the Greek table. It can be totally vegan, or it can be served with feta or greek yogurt as well as a sunnyside up egg. Very tasty spanakorizo and different to the way I make it.
