In a bowl, combine the egg whites, sherry, sesame oil, and cornstarch, and whisk until thickened. In a wok, add chicken stock, cabbage, carrots, capsicum, ginger, chicken, salt and mix well and bring it to boil. Add the soya vinegar sauce into it and mix well. Add Cornflour mixed in water into the wok and mix well.

A beaten egg may be drizzled over soup and given a boil.Then switch off flame but it is optional. Garnish with chopped cilantro and immediately serve piping hot a bowl of hot and sour chicken soup.
