- I used left over cooked rice but if you don't have leftover rice, you then wash and cook your rice in salted water until almost done. Rinse and drain the water then set aside
- As you are cooking the rice, wash and dice your veggies. I used carrots, green beans, green peppers and onions
- Whisk your eggs. Add a little salt and seasonings.
- Put a frying pan or wok on fire. When hot, add 2 tablespoons of oil. Fry the eggs (scrambled eggs) but don't let it brown. When done, put in a plate and set aside.
- Add 2 tablespoons of oil again into the pan and pour the veggies but you should add the green pepper last as it cooks fast. Saute the veggies until tender then you add in the rice. Stir to combine.
- Add in a dash of soy sauce and chilli sauce. Stir properly then adjust the taste by adding seasonings and/or spices.
- Add the scrambled eggs, stir to combine then cover with foil paper and lower the heat and cook for 20-30 secs depending on how moist you want it.
- Serve… you can have it with either salad, soup or a sauce… or alone as it is full of flavors π Enjoyπ₯π
