  3. When the chicken looks done, prod the place where the leg meets the body with a prong. If the juices that come out are clear, the chicken is done. If they are murky, it needs a little more time.
  4. Put the chicken on a carving dish and let it rest for 10 minutes. Use the juices in the pan to make some gravy. Enjoy!!

Place chickens on a rack in a roasting pan, breast side up. Rub seasonings over outside and inside of chickens. Place the onion in a large roasting roasting pan. Pat the chicken dry with paper towels. Tuck the wings under the chicken and place it on top of the onion.
