What I love about this vegan Mac and Cheese recipe is that it's just as fast to prepare as the version that comes in a box with neon-orange food coloring. While your pasta is cooking, you simply blend the creamy vegan cashew sauce in a blender until smooth. Stir in the mustard and nutritional yeast flakes, grate and stir in the vegan cheese (if using), then season to taste with salt and pepper. Drain and add the macaroni to the sauce, then toss to coat.
