The ingredients are simple—just spaghetti (or other long pasta), and the carbonara is made with pancetta or bacon, eggs, Parmesan, a little olive oil, salt and pepper.

To get started with this recipe, we must first prepare a few components. You can cook carbonara pasta using 8 ingredients and 8 steps. Here is how you can achieve it.

The ingredients needed to make Carbonara Pasta:
  1. Take 1 tablespoon extra virgin oil or unsalted butter
  2. Make ready 1/2 pound pancetta/thick cut bacon/chicken ham. Diced
  3. Get 2 cloves garlic, finely minced
  4. Take 3-4 whole eggs

  6. Prepare 1 cup grated parmesan

While the pasta is still really hot, slowly drizzle in the egg mixture, stirring the pasta the whole time. The sauce will become thick and should coat the pasta. Splash in a little hot pasta water if needed for consistency. Arrange in reserved skillet and drizzle with a little oil.

Steps to make Carbonara Pasta:
  1. Boil the water to cook the pasta.. Add generous salt inside the water
  2. While the water is coming to boil, heat some oil in the pan over medium heat, add bacon/pancetta and cook until crispy. Add garlic and mushroom, continue cooking for another few minutes. Turn off the heat and move it into a large bowl
  3. In a small bowl, beat the eggs and mix in about half of the cheese.
  4. Once the water has reached a rolling boil, add the dry pasta, and cook, uncovered, at a rolling boil until al dente (a little firm, not mushy)
  5. Use tongs to move it to the bowl with the bacon, mushroom and garlic. Let it be dripping wet. Reserve some of the pasta water.
  6. Do it quickly, as you want the pasta to be hot. It's the heat of the pasta that will heat the eggs sufficiently to create a creamy sauce. - Toss everything to combine, allowing the pasta to cool just enough so that it doesn't make the eggs curdle when you mix them in.
  7. Add the beaten eggs with cheese and toss quickly to combine once more. Add salt to taste. Add some pasta water back to the pasta to keep it from drying out.
  8. Mix in the rest of the parmesan and freshly ground black pepper. Add freshly chopped parsley too :) - Serve with creamy mushroom soup and salad as side dish 😉😋🤤

Set over medium heat and cook, stirring occasionally, until lightly golden brown and starting to. Cook the pasta in a pan of boiling salted water according to the packet instructions. Slice the bacon and place in a non-stick frying pan on a medium heat with half a tablespoon of olive oil and a really good pinch of black pepper. Wine Pairing: Spaghetti Carbonara is a rich pasta dish so the best wine pairings will always be crisp whites like Pinot Grigios or Gris. Let the full-bodied flavors of the eggs, cheese, and garlic take center stage and pair with a light, pear or citrus flavored wine.
