  1. Make ready 1 cup Vermicelli (thin)
  2. Take 1 1/2 litres Full Cream Milk
  3. Take 1/2 Cup Sugar
  4. Make ready 1/2 cup Condensed Milk
  5. Take 25 gm Cashew Nuts
  6. Make ready 25 gm Almonds
  7. Get 25 gm Raisins
  8. Get 25 gm Pistachios
  9. Take 10-12 Seedless Dates
  10. Get 2 tbsp Ghee
  11. Take 1 tsp Cardamom Powder

Sheer khurma is made with milk, vermicelli, dried dates and sugar. 'Sheer' stands for milk and 'Khurma' stands for dates in persian language. Sheer Khurma is a rich vermicelli pudding made with milk, lots of nuts, dates and sugar! The dish literally means milk with dates. Its often made during Eid in the Indian subcontinent, Afghanistan and also parts of central Asia.

Instructions to make Sheer khurma:
  1. Heat ghee in a pan and roast 1/4 of Cashews and Raisins mentioned and keep aside. Soak the almonds in hot water to blanch. Remove the skin and keep aside. Now in the same pan add the vermicelli and roast nicely. Do not burn.
  2. Add 1 litre Milk and allow it to boil and cook. Take the other half litre Milk and boil. From that take some in bowl and soak 3/4 th of dates for 15-20 minutes. Then grind it with the rest of the milk. Add this to the vermicelli and milk mixture.
  3. Now in a mixer jar take all the nuts and raisins and almonds and dates. Keep some for Garnish. Grind coarsely to a powder. When the vermicelli is cooked add the sugar and the powdered nuts. Let it cook until sugar dissolves. Add more milk if the consistency is thick. When almost done, add the condensed milk and few Saffron strands. Switch off and Garnish with chopped nuts and cardamom powder. Sweetness can be adjusted according to your taste and preference 😋.
