Sheer khurma or sheer khorma (Persian: شير خرما ‎, romanized: shîr xormâ "milk and dates") is a festival vermicelli pudding prepared by Muslims on Eid ul-Fitr and Eid al-Adha in Afghanistan, Indian subcontinent and parts of Central Asia. It is a traditional Muslim festive breakfast, and a dessert for celebrations. This dish is made from various dry fruits, vermicelli, thickened milk.

The ingredients needed to make Sheer Khorma:
  1. Prepare 1 cup vermicelli(brown-roasted, crushed with hands)
  2. Get 1/2 liter, full cream milk
  3. Make ready 5 or more tbsp condensed milk
  4. Prepare 5-6 almonds chopped
  5. Get 5-6 pistachio chopped
  6. Make ready 4-5 cashews
  7. Prepare 2 tbsp chirongi
  8. Take 5-6 dry dates (I didn’t use)
  9. Prepare 4-5 raisins
  10. Get 2 tbsp desi ghee
  11. Prepare 2 pods, green cardamom crushed
  12. Take 3 drops, rose water

Sheer khurma is made with milk, vermicelli, dried dates and sugar. 'Sheer' stands for milk and 'Khurma' stands for dates in persian language. Sheer Khurma is a rich vermicelli pudding made with milk, lots of nuts, dates and sugar! The dish literally means milk with dates. Its often made during Eid in the Indian subcontinent, Afghanistan and also parts of central Asia.

Instructions to make Sheer Khorma:
  1. Place a frying pan on stove add ghee and heat it - Now fry the pistachios, cashews, chirongi and almonds till golden.
  2. Take them out and keep in a plate - - Now in the same pan add cardamom,in the ghee and vermicelli and roast it till golden brown.
  3. On the other hand Boil milk in a heavy-bottomed pan - - Now add hot milk to the vermicelli pan and stir.
  4. Let it cook about 5-7 minutes on low flame - Now add condensed milk and stir.
  5. Add the fried dry fruits leaving a few for garnish - Now add raisins too. - And let it simmer for another 2-3 minutes.
  6. Towards the end add rose water - Remove from the flame.
  7. Transfer to the serving dish.
  8. Garnish with the dry fruits kept aside.
  9. Keep in the fridge about 2 hours before serving - Now ready to serve and relish.

Eid festivities are kind of incomplete until and unless you have Sheer Khurma! Sheer Khurma; a dessert ideal for Eid al-Adha or Eid-ul-fitr? Sheer Khurma is a dessert prepared with fine vermicelli yet name does not mean vermicelli or have it within. Khurma stands for dates while Sheer stands for Milk in the Persian language. Dates were considered to be a favorite of Prophet Mohammed.
