Sheer khurma is made with milk, vermicelli, dried dates and sugar. 'Sheer' stands for milk and 'Khurma' stands for dates in persian language. Sheer Khurma is a rich vermicelli pudding made with milk, lots of nuts, dates and sugar! The dish literally means milk with dates. Its often made during Eid in the Indian subcontinent, Afghanistan and also parts of central Asia.

Steps to make Sheer khurma:
  1. Firstly, add 1tbsp ghee and roaste seviyan.Roast on low flame till they turn golden brown, aromat and keep aside.
  2. In another large kadai heat 1 tbsp ghee and roast almonds, cashew, chironji, pistachios, raisins and dates.Roast on low flame and keep aside.
  3. Now add milk and bring to a boil. - further add roasted nuts and mix well.lower flame for 15 minutes  or till the milk slightly thickens. - add the roasted seviyan, ¼ cup sugar and give a good stir.
  4. Boil for 8-10 minutes or till semiya cooks completely.now add cardamom powder and kewra water. alternatively use rose water.
  5. Finally, serve sheer khurma hot or chilled topped with more dry fruits.
