  5. Take 5-6 Dates soaked

  7. Take 5-6 cloves
  8. Get 8-10 strands Saffron
  9. Make ready 1 tbsp Almond
  10. Get 1 tbsp Cashew
  11. Prepare 1 tbsp pistachio
  12. Take 3 tbsp Ghee

Sheer khurma is made with milk, vermicelli, dried dates and sugar. 'Sheer' stands for milk and 'Khurma' stands for dates in persian language. Sheer Khurma is a rich vermicelli pudding made with milk, lots of nuts, dates and sugar! The dish literally means milk with dates. Its often made during Eid in the Indian subcontinent, Afghanistan and also parts of central Asia.

Instructions to make Sheer khurma:
  1. Soak dates in water for 1 hour
  2. Chop dates
  3. Heat ghee in a pan and dry roast chopped dry fruits till golden…take them out
  4. In the same pan put a little crushed cardamom and clove and sauté for 10 seconds…add vermicelli and roast till golden brown
  5. Boil the full fat milk till reduced to half
  6. Put this milk and chopped dates to roasted vermicelli and cook for 5-6 mins till the dates are well absorbed and vermicelli are tender
  7. Add mama or khoya
  8. Put saffron milk and mix well
  9. Add sugar as per your taste.
  10. Add dry fruits and mix everything well
  11. Garnish with dry fruits and serve
