- Season the pork with salt, pepper, and mayonnaise , then cut into bite-sized pieces.
- Dredge in panko, coating the meat entirely.
- Fry the pork in a small amount of oil (over low-medium heat). Do not touch the pork pieces once they are placed in the pan.
- It's better to add a lot of mayonnaise to maintain the shape of the tonkatsu.
But I decided to post this as a separate recipe because there are a few things to be. For Tonkatsu, I highly recommend to use fresh panko (we call it "Nama Panko"). It's fresh bread crumbs not dried one. You can use food processor to make fresh panko from white bread (use only soft part of bread). It makes all the difference in texture and tenderness.
