  1. Boil Spinach leaves in water for 2-3 minutes
  2. Strain water from boiled spinach
  3. In a kadhai, add 2 tsp oil and add capsicum, peas and carrot. Saute for 5 minutes on low flame
  4. Once the vegetable cool down, transfer stir fry veggies with boiled spinach to blender
  5. To that add mint leaves and coriander leaves
  6. Blend it to a coarse paste
  7. Transfer the paste into mixing bowl and to that add boiled potatoes, chilli powder, dry mango powder, salt, garam masala, Turmeric powder, coriander powder, green chilli
  8. To that add 2 tsp bread crumbs and 1 tsp cornflour
  9. Add cottage cheese to that and mix well so that all spices are combined with vegetables
  10. Make small patties from the dough
  11. Cover the patties with bread crumbs to make kabab crispy
  12. Similarly prepare all the patties and cover with bread crumbs
  13. Heat the pan with oil for deep frying the patties
  14. Fry on medium flame from both sides
  15. Kababs are ready to serve with Coriander Mint chutney.. ENJOY!!
